10 ways to cleverly use small green kernels

At the sight of the small green pistachio kernels, anticipation for tasting already rises. Whether eaten plain, added as a crunchy element to desserts or used as a creamy paste, these nuts impress with their flavour, colour and versatility. Thanks to their high nutritional value, they are also an energy-rich snack for between meals. But how can you recognise quality and truly enjoy their full flavour?
  • Recognise quality

When buying pistachios, pay attention to the colour of the kernels. An intense green indicates fresh, high-quality fruit. Also check size and shell: larger, open kernels generally taste better. Avoid nuts that are damaged or smell musty.

  • Proper storage

Store pistachios in an airtight container in a cool, dry place. In the fridge they keep for several months, and in the freezer for up to a year. This way you can always enjoy fresh, crunchy kernels.

  • Incorporate pistachio powder

You can replace up to 25% of your flour with pistachio powder. This gives cakes, financiers or cookies a natural green colour, a delicate nutty flavour and extra moistness without negatively affecting the texture.

  • Make pistachio paste

Blend shelled pistachios with sugar, water and a neutral oil in intervals to obtain a smooth paste. This base works well for ganaches, creams and desserts and gives your creations an intense flavour and a velvety texture.
